The magic of Pinsa Romana in Paris 🍕

Maison Pinsa is the result of Matthieu and Jean-Christophe’s desire to share their memories of summer holidays and their passion for Italy, its gastronomy and its wonderful local produce. On holiday in Italy, they discovered the pinsa romana, an oval-shaped pizza made with a mixture of flour (wheat, soy and rice) which is deliciously light, yet healthy and easily digestible.

At that point, they realised they wanted to launch this product in France and become the leading restaurant for pinsa in Paris.

In 2019, they decided to open their restaurant in Paris: a warm and welcoming venue in which diners feel at home. The focus is on customer service, along with quality produce.

Today’s customer satisfaction is tomorrow’s sales.

All Maison Pinsa’s ingredients are sourced in Italy and are either D.O.C. (Denominazione di Origine Controllata) or organic. Everything is freshly prepared and the legendary pinsa dough, which is made in the restaurant, is left to prove for 48 to 72 hours before being rolled out by hand.

Compensating for summer sales with digital orders during the rest of the year 🛍️

“We launched Maison Pinsa 6 months before COVID. During the first year, business was very unpredictable and it was difficult to manage our day-to-day operations, particularly staff scheduling. We needed to find our cruising speed and compensate for the loss of summer orders resulting from our outdoor terrace,” Jean-Christophe explains.

Before Flynt, our delivery sales volume was catastrophic.

Jean-Christophe wanted to offset off-peak hours with orders on Deliveroo and Uber Eats to stabilise the company’s operations and maintain the team’s momentum.

With Flynt, Jean-Christophe can implement a strategy for promotional offers and sponsored ads in just a few clicks, boosting his company’s online visibility and increasing its order volume whenever necessary.

Now that our business has stabilised, we can staff it properly.

“Initially, I looked at my performance indicators every day on Flynt. After various tests, I was able to develop an appropriate marketing strategy and take a step back. Now, I log on once a month to check my strategies and change them if necessary, such as when there’s a specific event like a football match, for instance,” Jean-Christophe says.

“The three indicators I focus on are turnover, profits and changes in them. I analyse relevant comparison periods,” Jean-Christophe continues.

“I have better insight into my profitability because Flynt takes into account my material cost, the cost of each special offer and the platforms’ commission. The figure calculated by the tool is therefore true profit,” Jean-Christophe emphasises.

With a custom marketing strategy, Maison Pinsa saw a +90% increase in sales in deliveries and a +67% increase in profits in the last quarter of the year compared to the same quarter last year.
